fix: configure uConsole manually without nixos-uconsole module

- Module has hardware.raspberry-pi compatibility issues
- Manual config like cyt-pi (display, firmware, GPU)
- Keeps nixpkgs-uconsole for package compatibility
- All hosts now evaluable
