Updates the compose submodule to commit 3f82c9d on branch fix/hermes-entrypoint-simple.

This simplifies the Hermes deployment by dropping all custom entrypoint scripts and using the image's native s6-overlay multi-profile supervision. Profiles with desired_state: running in gateway_state.json are auto-started by the s6 reconciler on boot.

See compose PR #58 for the full details.

Closes #78 (supersedes the previous overengineered approach).

The five profiles (ashley, claire, finn, matt, paul) auto-start
