bump compose: dashboard-cathou auto-start in boot bundle

chore: ignore secret backups
secrets: re-encrypt containers.env to gortium.main with rotated dashboard/honcho/restic/cathou secrets; repair secrets.nix (was corrupt). age secrets never in public repo.
