uConsole: use mkUConsoleSystem instead of manual nixosSystem

Using nixos-uconsole.lib.mkUConsoleSystem ensures the exact same
module composition as the pre-built image, so the kernel derivation
hash matches what'\''s already in the store (6.12.47).
